Shaped by the Elements. Perfected for Distinction.
Great coffee is not simply grown—it is transformed.
At The Falcon House, our institutional coffee program is inspired by one of the world's most distinctive post-harvest processes: Monsooning.
Using moisture-rich monsoon winds along India's southwestern coastline, carefully selected Arabica and Robusta beans undergo a controlled maturation process that produces an unmistakably smooth cup with remarkable body and exceptional stability.
Unlike conventional coffees that emphasize bright acidity, Monsooned Malabar develops a mellow character, velvety mouthfeel, and balanced sweetness—making it exceptionally suited for luxury hospitality.

A Legacy Born at Sea
The story of Monsooned Malabar dates back to the eighteenth century when wooden merchant vessels carried green coffee from India's Malabar Coast to Europe.
During the months-long voyage around the Cape of Good Hope, the coffee was continuously exposed to humid sea air and monsoon winds. By the time the ships reached European ports, the beans had undergone an extraordinary natural transformation.
The beans expanded in size.
Their colour shifted from vibrant green to pale golden.
Most importantly, their flavour evolved into an exceptionally smooth coffee with a rich body and almost no sharp acidity.
European coffee merchants soon developed a strong preference for this unique profile.
As modern steamships shortened travel times and protected cargo from humidity, this natural transformation disappeared. To recreate the beloved flavour, producers in southern India developed the controlled land-based monsooning process that continues today.
The Science Behind Monsooning
Modern monsooning combines traditional methods with strict environmental control.
1. Premium Bean Selection
Only carefully selected Arabica and Robusta coffees grown in the Western Ghats are chosen for monsooning.
The region's rich volcanic soils, high elevations, and tropical climate provide dense beans with excellent maturation potential.
2. Coastal Conditioning
The green coffee is transferred to open-sided warehouses along the coastal belt near Mangalore and the Malabar region.
During the southwest monsoon, the beans absorb naturally humid maritime air over a period of approximately 12 to 16 weeks.
Humidity levels often remain above 90%, creating ideal conditions for controlled maturation.
3. Controlled Moisture Absorption
Coffee naturally absorbs atmospheric moisture.
Throughout the curing period, internal moisture levels gradually increase until equilibrium is achieved with the surrounding environment.
This slow transformation fundamentally alters the bean's physical characteristics.
4. Cellular Expansion
As moisture penetrates the bean, its internal cellular structure expands significantly.
The beans become noticeably larger, softer, and lighter in colour.
This structural change influences roasting behaviour, allowing heat to penetrate more evenly while encouraging deeper caramelization during roasting.
5. Natural Reduction of Acidity
One of the defining characteristics of Monsooned Malabar is its exceptionally low acidity.
Extended exposure to humid conditions gradually reduces compounds responsible for bright acidic flavours, resulting in a smoother, rounder cup with remarkable balance.
Rather than sharp citrus notes, the coffee develops:
- Heavy body
- Earthy sweetness
- Mild spice
- Toasted nuts
- Cocoa
- Soft woody notes
- Lingering smooth finish
6. Continuous Manual Rotation
Throughout maturation, every lot is regularly turned and aerated.
The beans are repeatedly raked by hand, loosely packed into breathable jute bags, and restacked to ensure uniform exposure to coastal air while preventing moisture imbalance.
This careful attention ensures consistency across every production lot.
Why Luxury Hospitality Chooses Monsooned Malabar
Luxury hospitality requires more than exceptional flavour.
It requires consistency, reliability, and performance throughout extended service hours.
Traditional high-acidity coffees often deteriorate during prolonged heat holding, gradually becoming sour or bitter.
Monsooned Malabar behaves differently.
Its naturally low acidity and dense body create a remarkably stable coffee that maintains flavour integrity throughout service.
Thermal Stability
Maintains a smooth profile even after extended holding in commercial airpots and banquet service.
Rich Espresso Extraction
Produces thick crema, excellent body, and balanced sweetness for premium espresso beverages.
Superior Milk Pairing
Low acidity allows the sweetness of milk to shine in cappuccinos, flat whites, and lattes.
Batch Consistency
Ideal for hotels, conference centres, airport lounges, and institutional coffee programs serving hundreds of guests daily.
